A FOOD TRADITION

Euphrates Cuisine

Euphrates cuisine refers to foodways along Syria’s middle and lower Euphrates valley, where river, steppe, and settled agricultural environments meet. It relies on wheat, rice, bulgur, dates, lamb, freshwater fish, yogurt, eggplant, okra, and pulses. Common techniques include open-fire grilling, slow cooking in large pots, stuffing vegetables, preparing grain-and-meat mixtures, and drying or preserving seasonal produce. Examples include masgouf-style grilled fish, tashreeb, and rice dishes served with lamb or river fish. The tradition shares ingredients and forms with Iraqi, Jaziran, and broader Arab cuisines, but the Euphrates setting gives it a recognizable regional identity within Syria.
