A FOOD TRADITION
Fataluku cuisine
Fataluku cuisine belongs to communities concentrated in Timor-Leste’s eastern Lautém area and reflects both upland cultivation and the region’s coastal access. Maize, cassava, rice, taro, sweet potato, coconut, wild greens, fish, and pork are important ingredients, with local availability shaping the balance between land and sea foods. Cooking commonly includes boiling, roasting, smoking, drying, pounding, and preparing meat or fish in bamboo, techniques suited to communal meals and preservation. Examples associated with eastern Timorese foodways include tukir, meat cooked in bamboo; batar daan, a maize-and-bean preparation; and grilled or dried fish served with chili relishes. These traditions remain culturally distinct without implying exclusive ownership of shared dishes.
