A FOOD TRADITION

Filipino-Chinese Cuisine

Filipino-Chinese cuisine reflects centuries of Hokkien and other Chinese migration, trade, intermarriage, and adaptation within Philippine communities. It combines Chinese techniques and pantry items with local rice, seafood, pork, chicken, vinegar, calamansi, tropical vegetables, and sweet-savory flavor preferences. Stir-frying, steaming, braising, deep-frying, noodle making, and dumpling preparation are central methods. Representative dishes include pancit canton, lumpia, and siopao, alongside household preparations that differ from restaurant versions. The tradition is diverse across Manila, major port cities, and provincial Chinese-Filipino communities, and it is best understood as an adapted cultural cuisine rather than a purely imported one.
