A FOOD TRADITION
Fula Cuisine
Fula cuisine represents the foodways of Fula or Fulani communities in The Gambia and across the western Sahel and savanna. It combines cultivated grains such as millet, sorghum, fonio, and rice with milk, fermented dairy, leafy vegetables, peanuts, meat, and occasional fish. Porridges, steamed grain preparations, couscous-like dishes, and simple broths are common, reflecting pastoral as well as farming livelihoods. Examples associated with Fula foodways include fura, millet dumplings served with milk; lacciri, a couscous-like grain preparation; and fonio dishes served with milk or a savory sauce. Local versions vary significantly and overlap with neighboring cuisines.
