A FOOD TRADITION
Fulani Cuisine
Fulani cuisine in Burkina Faso is found particularly among pastoral and semi-pastoral communities in the Sahel and northern regions, while sharing practices with Fulani populations across West Africa. Dairy products such as sour milk, curds, and butter can accompany millet or sorghum, alongside grains, cowpeas, groundnuts, dried fish, and foraged leaves. Cooking often favors portable grain preparations, thick porridges, simple stews, and roasting or simmering when livestock products or game are available. Examples include millet tô with milk or sauce, fermented milk drinks, and grain dishes enriched with butter or curds. Local diets differ considerably between settled farmers, herders, and market towns.
