A FOOD TRADITION

Ga Cuisine

Ga cuisine is rooted in the coastal Accra area and the foodways of Ga-speaking communities, while also reflecting long interaction with neighboring peoples and Atlantic trade. Maize, fish, cassava, palm oil, okra, peppers, and fermented doughs are central. Maize is fermented and steamed into kenkey, fish is grilled or fried and served with hot pepper sauces, and festival foods may be prepared from pounded or steamed maize. Representative dishes include Ga-style kenkey with fish and pepper, kpokpoi associated with Homowo celebrations, and okro-based fish stews. Similar preparations occur elsewhere in Ghana, so these dishes should be understood as shared regional forms rather than exclusive Ga inventions.
