A FOOD TRADITION

Gagauz Cuisine

Gagauz cuisine is the culinary tradition of the Turkic-speaking Gagauz communities concentrated in southern Moldova, especially around Comrat, Ceadir-Lunga, and Vulcanesti, while also reflecting long-standing Balkan, Black Sea, and Moldovan exchange. It commonly combines cornmeal, wheat, dairy, cabbage, peppers, onions, seasonal vegetables, pork, poultry, and freshwater or preserved fish. Home cooking favors soups, stews, baked doughs, stuffed vegetables, and fermented or pickled preparations, with hearth and oven techniques especially prominent. Recognizable examples include gozleme-style filled pastries, kavarma meat stews, and bulgur- or grain-based stuffed dishes. Recipes vary by village and family, so the tradition should be presented as shared and evolving rather than isolated from neighboring cuisines.
