A FOOD TRADITION

Gascon Cuisine

Gascon cuisine comes from the historic Gascony area of southwestern France, broadly associated with the Landes, Béarn and parts of Armagnac country. It is known for robust farmhouse cooking based on duck and goose, pork, beans, corn, seasonal vegetables, poultry and game. Confit, preservation in fat, slow casseroling and the use of aromatic stock are characteristic techniques, while garlic, peppers and local spirits often deepen dishes. Representative examples include cassoulet, garbure and magret de canard. Gascon traditions overlap with neighboring Basque, Béarnais and Languedoc practices, but their distinctive southwestern pantry and confit-centered methods justify a separate catalogue entry.
