A FOOD TRADITION
Gheg cuisine
Gheg cuisine is associated with northern Albania and the wider Gheg-speaking cultural area, including traditions that continue across present-day borders. It reflects mountain, pastoral and continental conditions, with cornmeal, wheat, beans, potatoes, cabbage, dairy, lamb and preserved meats appearing prominently. Cooking commonly uses slow simmering, hearth baking, griddling and preservation through drying or salting. Representative foods include flia, layered batter cooked slowly over a fire; kaçamak, a cornmeal preparation served with dairy; and jufka or other handmade pasta dishes served with meat or butter. Recipes vary considerably between highland and lowland communities, so this is a broad cultural tradition rather than a uniform regional menu.
