A FOOD TRADITION
Goan Cuisine
Goan cuisine combines Konkani coastal foodways with Hindu, Catholic, and Portuguese-influenced traditions. Rice, coconut, kokum, tamarind, vinegar, dried red chilies, seafood, and pork are prominent, while vegetarian preparations form an important parallel repertoire. Techniques include grinding fresh masalas, simmering coconut-based gravies, fermenting or souring, pickling, and slow braising. Fish curry, pork vindaloo, and sorpotel are widely recognized examples, alongside dishes such as xacuti and distinctive rice breads. Goan cooking has historical links with other Konkan communities and should be presented as a layered regional tradition rather than a purely colonial cuisine.
