A FOOD TRADITION

Goral cuisine

Goral cuisine is associated with the highland communities of northern Slovakia and the adjacent Carpathian borderlands of Poland and, in broader cultural terms, Ukraine. Its foodways developed around mountain pastoralism, small-scale grain and potato cultivation, forest products and long winter storage. Sheep milk cheeses, potatoes, cabbage, smoked meats, sourdough breads and berry or mushroom preparations are prominent, with boiling, baking, smoking and open-hearth cooking widely used. Recognizable examples include bryndzové halušky in highland forms, bryndza-based soups and potato dishes, and oštiepok or related smoked sheep cheeses. Recipes and terminology differ across the border, so this is a shared regional tradition rather than an exclusive Slovak cuisine.
