A FOOD TRADITION

Greater Polish Cuisine

Greater Polish cuisine developed in west-central Poland around Poznań and the historic Wielkopolska region. Its foodways reflect fertile agriculture, rye and wheat baking, potatoes, dairy farming, pork, goose and seasonal vegetables, with some German and neighboring Central European influence. Soups, roasts, yeast baking and carefully prepared potato dishes are prominent. Examples include pyry z gzikiem, potatoes with a seasoned curd-cheese topping; rogal świętomarciński, a festive crescent pastry filled with white poppy seed; and czernina, a traditional duck-blood soup with sweet-sour seasoning. Local cooking also includes substantial breads, noodles and celebratory goose preparations.
