A FOOD TRADITION

Greek Thracian Cuisine

Greek Thracian cuisine is practiced in northeastern Greece, especially around Evros and the Thracian communities of Rodopi and Xanthi, and shares elements with neighboring Bulgarian and Turkish traditions. Peppers, aubergines, cabbage, beans, cornmeal, pork, lamb, dairy, freshwater fish and aromatic herbs are widely used. Fermentation, pickling, smoking, baking and slow cooking are important techniques, reflecting both agricultural life and cross-border cultural exchange. Representative foods include kavourmas, preserved cooked meat; banitsa-like savory pies; and soutzoukakia or other spiced minced-meat preparations shaped by regional Ottoman and Balkan connections. Local Muslim and Christian communities contribute overlapping but distinct practices.
