A FOOD TRADITION
Guinea-Bissau Inland Savanna Cuisine
Inland savanna cooking in Guinea-Bissau uses a broader mix of rain-fed grains, legumes, groundnuts, tubers and livestock products than the coastal rice belt, while rice remains important where irrigation or trade makes it available. Groundnut sauces, millet or fonio preparations, cowpeas, cassava, sweet potato, greens and dried or fresh meat are recurring components. Techniques include pounding grains, simmering peanut-based stews, boiling tubers and drying ingredients for later use. Caldo de mancarra, canchupa and millet or fonio porridges illustrate the wider repertoire, although each dish crosses regional and ethnic boundaries. Fula, Mandinka and neighboring communities contribute overlapping versions rather than isolated cuisines.
