A FOOD TRADITION

Haurani Cuisine

Haurani cuisine comes from the volcanic plain and villages of southern Syria, especially the Hauran, and is closely connected to neighboring southern Levantine foodways. Wheat, bulgur, lentils, chickpeas, lamb, clarified butter, tomatoes, onions, and seasonal greens form the foundation. Cooking traditionally favors communal preparation, stone-ground grains, slow stews, griddle breads, and stuffed or layered dishes that make practical use of durable staples. Representative examples include maqluba, mansaf-style rice and meat preparations, and kibbeh variations associated with the south. Its repertoire is rural and grain-centered, with local differences across villages and communities rather than a single standardized menu.
