A FOOD TRADITION

Hwanghae cuisine

Hwanghae cuisine developed in the fertile western lowlands and coastal areas historically known as Hwanghae, including regions around the Haeju area. Rice, millet, wheat, beans, seafood, shellfish, and locally grown vegetables support a cuisine combining agricultural abundance with coastal preservation practices. Cooking commonly features grain-based pancakes, clear or lightly seasoned soups, seafood preparations, and fermented side dishes. Representative examples include Haeju bibimbap, a mixed rice dish associated with the region; Hwanghae-style naengmyeon; and various mung-bean pancakes and seafood jeon. Recipes overlap with neighboring Pyongan and Gyeonggi traditions, reflecting long-standing movement of people, ingredients, and techniques.
