A FOOD TRADITION

Hyderabadi Cuisine

Hyderabadi cuisine developed in the Deccan through interaction among Telugu, Deccani Muslim, Persianate, Turkish, and other regional traditions. Rice, meat, yogurt, tamarind, dried coconut, sesame, peanuts, saffron, and aromatic spices are used across its savory and sweet repertoire. Hallmarks include slow dum cooking, layered rice preparation, grinding roasted nuts and seeds, and balancing sour, hot, and fragrant elements. Hyderabadi biryani, haleem, and mirchi ka salan are representative examples. The tradition is urban and cosmopolitan, with connections to wider Deccan cooking rather than an exclusive single-origin claim.
