A FOOD TRADITION
Indigenous Surinamese Cuisine
Indigenous Surinamese cuisine includes the diverse foodways of peoples such as the Kali'na, Lokono, Trio, Wayana, and related communities in the coastal interior and southern rainforest. It cannot be reduced to one local menu, but cassava, bitter and sweet manioc, plantain, maize, fish, game, fruits, and forest plants recur across many traditions. Important techniques include grating and processing cassava, pressing and cooking its juice, roasting over fire, smoking, boiling, and preparing food in leaves. Cassava bread, kasiri, and pepperpot-like fish or game stews are representative examples, with substantial variation by community and environment.
