A FOOD TRADITION
Iranian Azerbaijani Cuisine
Iranian Azerbaijani cuisine is associated with Azerbaijan and adjacent northwestern areas, where Turkic culinary practices meet Iranian regional ingredients. Wheat, rice, herbs, dairy, lamb, beef, poultry, dried fruits and saffron are common, with soups, filled pastries, pilafs and slow-cooked dishes prominent. Techniques include simmering in earthenware or metal pots, layering rice, grilling meat and preparing fresh herb mixtures. Recognizable examples include dizi-style meat and chickpea stew in local forms, kuku variations, and a range of ash soups such as ash-e doogh. This tradition is closely related to cuisines across the wider Azerbaijani cultural region and should not be treated as an exclusive national invention.
