A FOOD TRADITION

Italian-Uruguayan Cuisine

Italian-Uruguayan cuisine is a durable immigrant-derived tradition shaped by Italian communities, especially in urban and port settings, and subsequently incorporated into everyday food culture across Uruguay. It combines wheat flour, pasta, tomatoes, olive oil, cheese, beef, and chickpea flour with local ingredients and Rioplatense serving habits. Characteristic techniques include hand-making and drying pasta, baking in strong ovens, preparing enriched doughs, and cooking fainá on a hot griddle or oven tray. Representative examples include ñoquis, tallarines with sauce, pizza, fugazza, and fainá. The tradition is not a simple transplant from Italy: local tastes, ingredients, and dining customs have produced distinctly Uruguayan forms.
