A FOOD TRADITION

Jizani Cuisine

Jizani cuisine is associated with the lowlands, islands, and coastal communities of Jizan in southwestern Saudi Arabia. Its ingredients reflect a hot Red Sea environment and contact with Yemen and the Horn of Africa: sorghum, millet, rice, fish, shrimp, coconut in some preparations, dates, herbs, and pungent chiles. Characteristic techniques include stone-grinding grains, preparing dense porridges and breads, slow-cooking stews, and grilling or drying seafood. Examples include masoub-style bread and fruit mixtures, traditional sorghum-based porridge dishes, and fish or shrimp preparations seasoned with local spice blends. It is a distinct southwestern coastal foodway, while many dishes and techniques are shared across the Yemeni-Red Sea cultural zone.
