A FOOD TRADITION
Kachin Cuisine
Kachin cuisine comes from the mountainous north of Myanmar and from Kachin communities whose food traditions also connect with neighboring Himalayan and Yunnanese regions. Rice, sticky rice, river fish, pork, chicken, game where locally customary, bamboo shoots, wild greens, mushrooms, herbs, and chilies are prominent. Characteristic methods include grilling over fire, smoking, boiling, pounding fresh herbs into dips, and making lightly seasoned broths rather than relying only on rich curries. Examples include shat jam, rice cooked with meat and aromatics; Kachin-style pounded herb and chili relishes; and grilled or boiled meats served with sour bamboo-shoot or herb-based accompaniments.
