A FOOD TRADITION

Kakhetian Cuisine

Kakhetian cuisine belongs to eastern Georgia’s broad Alazani and Iori regions and is closely connected with wheat, vineyards, pastoral foods, and long-established feast culture. Cooking commonly emphasizes grilled or roasted meats, breads baked in tone ovens, walnuts, beans, herbs, and seasonal vegetables, with wine and preserved foods occupying an important cultural setting. Representative dishes include mtsvadi, skewered grilled meat; chakapuli, a herb-rich stew often made with lamb or veal; and Kakhetian-style bread such as shoti. The cuisine is not reducible to wine culture, and practices vary between lowland and mountain communities. Its ingredients and dishes also overlap with wider eastern Georgian cooking.
