A FOOD TRADITION

Kapampangan Cuisine

Kapampangan cuisine is associated with Pampanga and neighboring parts of Central Luzon and is widely recognized for elaborate savory cooking, confident use of offal, and careful balancing of richness, acidity, and aromatics. Pork, chicken, freshwater fish, garlic, vinegar, fermented seafood, and coconut are frequent ingredients. Slow braising, stewing, stuffing, grinding, and repeated sautéing of aromatics are characteristic techniques. Representative dishes include sisig, menudo-style dishes such as bringhe, and tocino-like buro or fermented preparations. Kapampangan cooking also includes festive noodle and rice dishes shaped by Central Luzon agriculture and longstanding culinary exchange.
