A FOOD TRADITION

Karamojong Cuisine

Karamojong cuisine comes from the pastoral and agro-pastoral foodways of northeastern Uganda and has close connections with related communities across the Karamoja and wider eastern African borderlands. Sorghum and millet are foundational, prepared as porridges or firm staple foods, while livestock contributes milk, meat and sometimes blood-based foods in contexts where those practices are customary. Drying, smoking and roasting are important for preserving and preparing meat, and wild greens, beans and groundnuts supplement seasonal supplies. Representative foods include sorghum or millet akaro, roasted or smoked goat, and grain-based meals served with meat or leafy-green sauces.
