A FOOD TRADITION

Kashmiri Cuisine

Kashmiri cuisine encompasses the food traditions of the Kashmir Valley and adjoining cultural regions, with distinct Pandit and Muslim repertoires as well as shared ingredients and techniques. Rice, lamb, turnips, lotus stem, dried greens, yogurt, fennel, saffron, and dried fruits are prominent. Cooking often involves slow braising, yogurt-based gravies, careful tempering, and the use of aromatic spices without relying solely on chili heat. Rogan josh, yakhni, and haak are representative dishes. Kashmiri foodways also connect with broader Himalayan and Central Asian exchange, so the cuisine has varied community-specific forms.
