A FOOD TRADITION
Konkani Cuisine
Konkani cuisine refers to related coastal food traditions along the western seaboard, especially among Konkani-speaking and neighboring communities in Goa, coastal Karnataka, and parts of Maharashtra and Kerala. Rice, coconut, kokum, tamarind, coastal greens, legumes, and seafood are foundational, with vegetarian and meat-based repertoires varying by community. Common techniques include pounding fresh coconut masalas, steaming, fermenting, frying, and preparing sour-spiced curries. Examples include sol kadhi, pathrode, and fish ambat, though names and forms vary across the coast. The tradition is geographically shared and should not be assigned exclusively to one modern state.
