A FOOD TRADITION

Krio cuisine

Krio cuisine is the creole food tradition associated especially with Freetown and Sierra Leone's Western Area, shaped by African, Caribbean, European, and coastal West African influences. Rice, cassava, plantains, seafood, palm oil, peppers, onions, and groundnuts are central ingredients. Cooking commonly combines stewing, frying, simmering, and charcoal grilling, with assertive pepper and aromatic seasoning. Representative dishes include jollof rice, cassava-leaf stew, and pepper soup; fried plantains and rice-based one-pot meals are also characteristic. Krio foodways overlap substantially with neighboring coastal traditions, so this label describes a historical urban and cultural style rather than an exclusive claim over particular dishes.
