A FOOD TRADITION

Kuba Cuisine

Kuba cuisine describes foodways associated with the Kuba cultural area of the central Kasai basin and adjacent forest-savanna zones. Cassava, maize, plantains, yams, beans, palm products, leafy greens, mushrooms, river fish and, where available, hunted meats form the principal food base. Fermentation of cassava, pounding of roots and grains, smoking fish, simmering greens in palm oil, and cooking food in leaves are characteristic techniques. Representative foods include kwanga, fufu with leafy or mushroom relish, and smoked or leaf-steamed river fish. Kuba foodways overlap with neighboring Kasai and Congo Basin traditions; this label is cultural and regional, not an exclusive claim over the dishes.
