A FOOD TRADITION
Kven Cuisine
Kven cuisine belongs to the Finnish-speaking Kven cultural tradition of northern Norway, especially in communities around the fjords and river valleys of Troms and Finnmark. It developed through migration, local adaptation, fishing, farming, gathering, and exchange with Sámi and Norwegian neighbors. Rye and barley, potatoes, freshwater and marine fish, berries, milk, and preserved meats feature prominently. Baking, drying, salting, smoking, and practical one-pot cooking are characteristic. Examples associated with Kven foodways include rieska-style flatbreads, fish soups, and potato-based dumplings or baked dishes. Terminology and recipes vary by community, and many foods overlap with neighboring Finnish and Norwegian traditions.
