A FOOD TRADITION

Lebou Cuisine

Lebou cuisine is rooted in the fishing communities of the Dakar peninsula, Rufisque, the Petite-Côte, and nearby coastal settlements. It emphasizes fresh fish, shellfish, rice, onions, tomatoes, tamarind, hibiscus, okra, and hot peppers, with ingredients often shaped by daily fishing and shoreline trade. Characteristic methods include grilling or frying fish, drying and smoking catches, pounding pepper and aromatics, and simmering seafood sauces before serving them with rice. Ceebu jën, soupe kandia, and thiou de poisson are useful examples, although each is shared beyond Lebou communities. The tradition is therefore best understood as a coastal cultural pattern within Senegalese cuisine, not an exclusive ethnic canon.
