A FOOD TRADITION
Limbu Cuisine
Limbu cuisine is associated with Limbu communities in eastern Nepal, especially the hill regions of Ilam, Panchthar, Taplejung, and surrounding areas, and shares elements with other Kiranti foodways. Fermentation, smoking, drying, and the use of forest and mountain produce are central. Staples and flavoring ingredients include millet, rice, buckwheat, greens, bamboo shoots, nettles, fermented soybean, herbs, and local chillies. Examples include kinema preparations made with fermented soybeans, yangben dishes using edible lichen, and tongba, a fermented millet beverage traditionally served through a bamboo vessel. Regional variation and overlap with neighboring traditions should be acknowledged.
