A FOOD TRADITION
Lunda cuisine
Lunda cuisine is associated with northwestern Zambia and with Lunda-speaking communities across parts of Angola and the Democratic Republic of the Congo. Meals are structured around a stiff maize, cassava, or millet accompaniment, served with relishes based on leafy vegetables, beans, groundnuts, mushrooms, fish, or meat. Cassava may be processed by soaking, drying, pounding, and cooking, while fish and meat are commonly dried, smoked, or stewed for preservation and flavor. Chikanda and related pounded tuber preparations occur in the wider region. Representative foods include cassava meal with leafy relish, mushroom or groundnut stew, and dried-fish accompaniments.
