A FOOD TRADITION
Madeiran Cuisine
Madeiran cuisine developed around the island’s steep volcanic terrain, Atlantic fishing grounds, subtropical crops, and historic links with maritime trade. Common foundations include tuna and other fish, salted cod, pork, beef, maize, sweet potato, sugar cane, garlic, wine, and local herbs. Cooking often combines grilling, stewing, skewering, baking, and slow braising, with robust marinades and simple preparations suited to island produce. Recognizable examples include espetada, beef grilled on laurel skewers; carne de vinha d’alhos, pork marinated in wine, vinegar, garlic, and spices; and bolo do caco, a flatbread commonly served with garlic butter.
