A FOOD TRADITION

Madurese Cuisine

Madurese cuisine originates with the Madurese people of Madura Island and their extensive communities in East Java and other Indonesian regions. It commonly features rice, beef, goat, chicken, corn, peanuts, coconut, fermented seasonings, and bold chili relishes. Techniques include charcoal grilling, slow braising, frying, and cooking meat with dark, aromatic spice mixtures. Representative dishes include sate Madura, soto Madura, and bebek songkem. The tradition is closely connected to East Java through migration and trade, but its characteristic preference for grilled meats, assertive seasoning, and distinctive festive preparations supports recognition as an ethnocultural cuisine in its own right.
