A FOOD TRADITION

Maithil Cuisine

Maithil cuisine comes from the Mithila cultural region of Nepal's southeastern Tarai and the adjoining plains of India. It is shaped by rice cultivation, seasonal vegetables, pulses, dairy, mustard oil, and a sophisticated repertoire of fried, steamed, and preserved foods. Preparations often use panch phoron-style seed tempering, grinding, smoking, and slow cooking, with ceremonial foods holding an important place in household and festival life. Representative dishes include fish curry, tarua vegetable fritters, and puri with vegetable or pulse accompaniments. The tradition is culturally distinct from the broad national label and should not be reduced to a list of Terai dishes.
