A FOOD TRADITION
Malayali Cuisine
Malayali cuisine, associated with Kerala and Malayali communities, is a recognizable regional South Indian tradition with deep links to Indian Ocean trade and a strong cultural presence in the UAE. It emphasizes rice, coconut, curry leaves, black pepper, tamarind, chilies, lentils, seafood, and vegetables, with meat also prominent in many regional preparations. Characteristic methods include grinding coconut-based pastes, tempering spices, steaming, frying, and slow-cooking curries. Examples include appam with stew, fish moilee, and puttu with kadala curry. It should be treated as a regional cuisine rather than a separate national category.
