A FOOD TRADITION

Malaysian Indian Cuisine

Malaysian Indian cuisine includes South Indian, Sri Lankan Tamil, North Indian and other communities whose cooking developed through migration, trade and local exchange. Rice, wheat, lentils, coconut, tamarind, curry leaves, mustard seed, chilies and spice blends structure the repertoire. Common techniques include griddle cooking, deep-frying, pressure cooking, stewing and layered curry preparation. Recognizable examples include banana leaf rice, tosai and roti canai, alongside dishes such as fish head curry and various biryanis. The category includes both home and festive traditions and should not be reduced to the restaurant-oriented Mamak repertoire.
