A FOOD TRADITION
Maranao Cuisine
Maranao cuisine is associated with the Lake Lanao area and Maranao communities of Mindanao, with foodways shaped by Islamic practice, lake fishing, rice cultivation, trade, and links across the Sulu and Malay worlds. Rice, freshwater fish, beef, chicken, coconut, turmeric, ginger, lemongrass, chilies, and toasted spices are common. Techniques include simmering rich sauces, grilling, frying, wrapping food in leaves, and preparing rice for communal feasts. Representative dishes include piaparan manok, beef rendang-like rendang preparations, and palapa-accented rice or meat dishes. Ceremonial cooking and layered spice pastes are especially significant.
