A FOOD TRADITION

Mineira Cuisine

Mineira cuisine is associated with Minas Gerais and with the rural interior of southeastern Brazil, where household cooking developed around farms, mining settlements, and preserved foods. Beans, cornmeal, pork, chicken, leafy greens, manioc, and fresh cheeses are recurring foundations. Techniques emphasize wood-fire cooking, cast-iron pots, slow braising, frying, curing, and preserving seasonal produce in simple but deeply flavored preparations. Recognizable dishes include feijão-tropeiro with beans, manioc flour, eggs, and pork; frango com quiabo, chicken with okra; and tutu de feijão, mashed beans thickened with manioc flour. It is a clearly established regional tradition rather than merely a collection of local specialties.
