A FOOD TRADITION

Montubio Cuisine

Montubio cuisine belongs to rural coastal farming and cattle-raising communities, particularly across parts of Manabi, Guayas, Los Rios, and adjacent lowlands. It is built around rice, green plantain, cassava, maize, peanuts, pork, poultry, and beef, with food often prepared over wood fires or wrapped in leaves for transport and communal eating. Seco de gallina criolla, tonga, and caldo de gallina criolla illustrate the tradition’s slow-cooked meats, seasoned rice, plantain, and substantial broths. Montubio food overlaps with neighboring coastal cuisines, but its connection to rural labor, household self-sufficiency, and distinctive cultural identity makes it more than an administrative subdivision.
