A FOOD TRADITION

Mozabite Cuisine

Mozabite cuisine belongs to the Ibadi Amazigh communities of the M'zab oasis region, where date-palm agriculture, limited water, and historic caravan connections shaped a practical but distinctive food culture. Dates, wheat and semolina, chickpeas, lentils, seasonal vegetables, olive oil, lamb, and occasionally camel meat appear in household cooking. Oases encourage careful use of dried ingredients, while breads and grain dishes are commonly baked, steamed, or served with concentrated sauces. Examples associated with the tradition include tagella-style oasis flatbread, couscous with vegetables or meat, and rfis or related crumbled-grain preparations made with dates or sauce. Documentation and terminology differ among M'zab communities.
