A FOOD TRADITION

Mulgi Cuisine

Mulgi cuisine is associated with Mulgimaa in southern Estonia and developed from the substantial farm cooking of the Mulk cultural region. It is known for economical, filling combinations of potatoes, barley, sauerkraut, pork, onions, and dairy, with grains and preserved cabbage extending the usefulness of local harvests through winter. Characteristic techniques include boiling and mashing, slow simmering, oven baking, and the preservation of meat and vegetables. The tradition is especially recognizable through mulgipuder, a potato-and-barley mash often served with pork; mulgikapsad, sauerkraut cooked with barley and meat; and mulgikorp, a baked or filled regional confection. These foods are shared with wider Baltic and Estonian traditions but retain a strong regional identity.
