A FOOD TRADITION
Nakhchivan Cuisine
Nakhchivan cuisine reflects the foodways of Azerbaijan’s landlocked southwestern exclave and its historical connections with eastern Anatolia and northwestern Iran. It emphasizes wheat, rice, lamb, poultry, dried fruits, souring agents, dairy, and preserved vegetables, with cooking adapted to a relatively dry continental landscape. Stuffed vegetables, layered pilafs, dumplings, and slow-cooked meat dishes are prominent, alongside distinctive breads and sweets associated with local towns. Examples include Nakhchivan-style dolma, arishta or noodle-based soups, and Ordubad specialties such as layered pastries and fruit preserves. The tradition is best understood as a regional repertoire rather than a collection of isolated local dishes.
