A FOOD TRADITION
Ndowe cuisine
Ndowe cuisine refers to coastal foodways associated with Ndowe-speaking communities along mainland Equatorial Guinea’s littoral and nearby Gulf of Guinea regions. Its setting favors a strong emphasis on marine and estuarine foods, including fish, crab, shrimp, and shellfish, combined with cassava, plantain, cocoyam, groundnuts, palm oil, and aromatic peppers. Fish may be grilled, smoked, or simmered in richly seasoned broths and sauces, while cassava and plantain provide the principal starchy accompaniments. Representative preparations include peppery fish soup, grilled or smoked fish with palm-oil sauce, and cassava or plantain served with crab or shrimp stew. These practices overlap with neighboring coastal cuisines and should not be treated as exclusive to Equatorial Guinea.
