A FOOD TRADITION
Niçoise Cuisine
Niçoise cuisine is the culinary tradition of Nice and the surrounding eastern Provence and Mediterranean coast, with longstanding cultural connections to neighboring Monaco. It combines coastal seafood with inland produce, olive oil, garlic, herbs, chickpeas, tomatoes, peppers, and locally available greens. Characteristic techniques include grilling, simmering vegetables in olive oil, baking savory tarts, and preparing legumes into batters or salads. Recognizable examples include salade niçoise, socca, and pissaladière. The tradition is not confined to the city of Nice: related dishes and methods circulate across the Riviera, making it a relevant shared regional influence alongside Monaco's own Monegasque cuisine.
