A FOOD TRADITION
Northern Mozambican Coastal Cuisine
Northern coastal cooking, especially around Cabo Delgado, Nampula and adjacent Indian Ocean communities, combines Makua and coastal Muslim traditions with long-standing Swahili, Arab and South Asian exchange. Cassava, coconut, rice, beans, seafood, peanuts and aromatic spices are central, while pounded cassava leaves and coconut-based sauces provide characteristic texture and richness. Fish and shellfish may be grilled, stewed or simmered with coconut and chile, and cassava is commonly boiled, pounded or made into meal. Recognizable examples include matapa, coconut seafood curries and cassava-based xima, alongside spiced rice and fried filled pastries found in coastal towns.
