A FOOD TRADITION

Northern Norwegian Cuisine

Northern Norwegian cuisine reflects the long coastline, fisheries, inland valleys, and Arctic growing conditions of Nordland, Troms, and Finnmark, without being limited to administrative boundaries. Cod, herring, halibut, lamb, potatoes, dairy, berries, and wild foods are common foundations. Salting, drying, fermenting, smoking, and gentle boiling are particularly characteristic, while seasonal fresh fish remains central. Examples include mølje, traditionally served with fresh cod, liver, and roe; boknafisk, partly dried fish; and stockfish preparations. Sámi, Kven, and coastal Norwegian practices overlap here, so this regional category should not be presented as culturally uniform.
