A FOOD TRADITION

Odia Cuisine

Odia cuisine is rooted in the coastal and inland foodways of Odisha, with strong links among household, agrarian, and temple cooking. Rice, lentils, vegetables, mustard oil, mustard seeds, panch phoron, coconut, raw banana, pumpkin, and fish are widely used. Techniques include steaming, tempering, slow simmering, roasting, and cooking without excessive layering of spices. Dalma, pakhala, and machha besara are representative dishes, while temple traditions contribute distinctive vegetarian preparations. Regional variation includes coastal seafood and inland produce, and Odia cooking shares some ingredients and methods with neighboring Bengal and eastern Indian cuisines.
