A FOOD TRADITION

Ohrid Lakeside Cuisine

Ohrid lakeside cuisine developed around the lake, its fishing communities, and the western Macedonian uplands. Fish, peppers, tomatoes, onions, beans, potatoes, seasonal greens, and locally made dairy products meet techniques associated with both Balkan village cooking and Ottoman-era urban kitchens. Fish is commonly grilled, baked, or prepared in stews, while dough dishes are layered, rolled, or baked in hearth ovens. Characteristic examples include Ohrid-style trout preparations, fish stew, and gjomleze, a layered baked dish often served with yogurt or savory accompaniments. Zelnik and other filled pies also connect the lakeside table with the wider western Macedonian culinary tradition.
